From the production and plating of dishes as entremetier at Café Boulud, from spending time as the assistant pasty chef to Sam Mason at WD-50, from years of assisting Alison Attenborough on commercial photo shoots, to his years of being a private chef in New York and Antigua – and most recently as the proud owner of a farm in upstate New York, Chris Lanier has been involved in producing amazing food from literally the ground up.
“My cooking has always been focused on the seasons, and I always go out of my way to find the very best products.
The natural progression was to see what it takes to foster beautiful produce first hand. I wanted to go beyond the chef who shops at all the markets, to the chef who works on the farm.
After two seasons (May-Oct) spent working on Fairview farm in Bridgehampton, I was hooked, and started to entertain the idea of getting a place of my own in the Catskills. The soil alone takes years to develop – and that is just the beginning.
So far on our farm it has been rewarding to have a careful hand in process of farm to table, and I hope that mindfulness is reflected in the dishes I prepare.”
